4 medium zucchinis

1 cup fresh basil leaves

1/3 cup pine nuts (lightly toasted)

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

2 garlic cloves, minced

1/2 cup extra virgin olive oil

Salt and pepper to taste

1 pint cherry tomatoes, halved

1/2 red bell pepper, diced

1/4 cup black olives, sliced (optional)

Fresh lemon juice (from 1 lemon)

Prepare the Zucchini Noodles: Using a spiralizer or a vegetable peeler, create zucchini noodles (zoodles) from the zucchinis. Sprinkle lightly with salt and set aside for about 10 minutes to allow them to release some moisture. Pat dry with a paper towel after.

    Make the Pesto: In a food processor, combine the basil leaves, toasted pine nuts, Parmesan cheese, minced garlic, and a pinch of salt. Pulse until finely chopped. While the processor is running, gradually drizzle in the olive oil until the pesto reaches your desired consistency. Taste and adjust seasoning with salt and pepper.

      Combine Salad Ingredients: In a large bowl, add the zucchini noodles, cherry tomatoes, diced red bell pepper, and black olives (if using).

        Toss with Pesto: Pour the prepared pesto over the salad and toss gently until everything is well coated. If the pesto seems too thick, you can add a splash of olive oil or some lemon juice to loosen it.
