Ingredients

2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon salt

1 large egg

½ cup unsalted butter, melted and cooled

1 cup buttermilk (or 1 cup milk + 1 tablespoon lemon juice)

1 teaspoon pure vanilla extract

2 cups peeled and chopped tart apples (such as Granny Smith)

1 tablespoon brown sugar (for topping)

1 teaspoon ground cinnamon (for topping)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.

Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.

Combine Wet Ingredients: In another bowl, whisk together the egg, melted butter, buttermilk, and vanilla extract until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients, stirring gently with a wooden spoon or spatula. Be careful not to overmix; it's okay if there are a few lumps.

Add Apples: Fold in the chopped apples gently until just combined.

Prepare for Baking: Divide the batter evenly among the muffin cups, filling each about two-thirds full.

Make Topping: In a small bowl, mix together the brown sugar and ground cinnamon. Sprinkle this mixture over the tops of the muffin batter.

Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

Cool Down: Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Serve: Enjoy these delightful muffins warm, straight from the oven, or store in an airtight container for up to 3 days.
