1 cup polenta (coarse cornmeal)

4 cups vegetable broth (or water)

1 teaspoon salt

4 tablespoons unsalted butter

4 cloves garlic, minced

1 cup freshly grated Parmesan cheese

1 teaspoon freshly cracked black pepper (adjust to taste)

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Start the broth: In a large pot, bring the vegetable broth (or water) to a boil. Add 1 teaspoon of salt.

    Add polenta: Gradually whisk in the polenta, continuing to whisk constantly to prevent lumps from forming. Reduce the heat to low.

      Cook the polenta: Allow the polenta to cook, stirring frequently, for about 20-25 minutes, or until it thickens and pulls away from the sides of the pot. If you prefer a creamier texture, cook for an additional few minutes.
