Ingredients
  

1 ½ cups all-purpose flour

½ teaspoon salt

1 tablespoon granulated sugar

½ cup unsalted butter, cold and cubed

4-6 tablespoons ice water

3 medium ripe pears, peeled, cored, and thinly sliced

1 cup fresh blueberries

½ teaspoon cinnamon

2 tablespoons brown sugar

Juice of 1 lemon

1 egg (for egg wash)

1 tablespoon coarse sugar (for topping)

Instructions
 

Make the Dough: In a large bowl, combine the flour, salt, and granulated sugar. Add the cold, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.

    Prepare the Filling: In another bowl, combine the sliced pears, blueberries, cinnamon, brown sugar, and lemon juice. Gently toss to coat the fruit with the sugar and cinnamon mixture and set aside to marinate while the dough chills.

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Roll Out the Dough: On a lightly floured surface, roll out the chilled dough into a circle about 12 inches in diameter. Transfer it to a parchment-lined baking sheet.

          Assemble the Galette: Place the fruit mixture in the center of the dough, leaving about a 2-inch border. Fold the edges of the dough over the filling, pleating it as you go to create a rustic look. It’s okay if some filling is exposed.

            Add Egg Wash: Beat the egg in a small bowl and brush it over the folded dough edges. Sprinkle the coarse sugar over the top for added sweetness and texture.

              Bake: Bake the galette in the preheated oven for 30-35 minutes, or until the edges are golden brown and the filling is bubbly.

                Cool and Serve: Allow the galette to cool for about 10 minutes before slicing. Serve warm or at room temperature, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
