Ingredients

1 cup creamy or crunchy peanut butter

1 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 cup rolled oats

1/2 cup all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chocolate chips (optional)

1/2 cup chopped nuts (e.g., walnuts or peanuts, optional)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

Cream the Sugars: In a large mixing bowl, combine the creamy or crunchy peanut butter, granulated sugar, and brown sugar. Using an electric mixer, cream them together on medium speed until the mixture is smooth and well combined.

Add Egg and Vanilla: Add in the egg and vanilla extract, mixing until fully incorporated. Make sure to scrape down the sides of the bowl to ensure everything is combined evenly.

Combine Dry Ingredients: In a separate bowl, whisk together the rolled oats, all-purpose flour, baking soda, and salt.

Mix Wet and Dry Ingredients: Gradually add the dry mixture to the wet mixture, stirring on low speed until just combined. If you’re using chocolate chips or nuts, fold them in gently with a spatula at this stage.

Scoop the Dough: Using a cookie scoop or tablespoon, drop heaping tablespoons of cookie dough onto the prepared baking sheet, leaving about 2 inches between each cookie as they will spread during baking.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are slightly golden. The centers will look a little soft but will firm up as they cool.

Cool: Remove the baking sheet from the oven and let the cookies cool on the sheet for 5 minutes before transferring them to a wire rack to cool completely.

Enjoy: Once cooled, enjoy your crunchy peanut butter oatmeal cookies with a glass of milk or your favorite beverage!
