Ingredients

1 cup creamy peanut butter

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

1/4 teaspoon salt

2 cups all-purpose flour

1 cup semi-sweet chocolate chips

1 cup mini peanut butter cups, chopped

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

Cream the Butters: In a large mixing bowl, use an electric mixer to cream together the creamy peanut butter and softened unsalted butter on medium speed until the mixture is smooth and well combined.

Add Sugars: Gradually add the packed brown sugar and granulated sugar to the butter mixture. Continue to beat until light and fluffy, about 2-3 minutes.

Incorporate Egg and Vanilla: Add the egg and vanilla extract, mixing until fully incorporated.

Mix Dry Ingredients: In a separate bowl, whisk together the baking soda, salt, and all-purpose flour. Gradually add this dry mixture to the peanut butter mixture, beating on low speed just until combined.

Fold in Chocolates: Gently fold in the semi-sweet chocolate chips and chopped mini peanut butter cups with a spatula, making sure they are evenly distributed throughout the dough.

Shape the Cookies: Using a cookie scoop or spoon, drop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked; this is okay as they will firm up while cooling.

Cool Down: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Enjoy: Once cooled, serve your Peanut Butter Cup Explosion Cookies with a glass of milk or your favorite beverage and enjoy the indulgent flavors of chocolate and peanut butter!
