2 ripe bananas, mashed

1 cup natural peanut butter (smooth or crunchy)

1/4 cup honey or maple syrup

1 cup rolled oats

1/2 cup whole wheat flour (or almond flour for a gluten-free option)

1/2 teaspoon vanilla extract

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/3 cup dark chocolate chips (optional)

1/3 cup chopped nuts (walnuts or almonds, optional)

Instructions
 

Preheat the oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal later.

    In a large mixing bowl, combine the mashed bananas and peanut butter until smooth. Stir in honey (or maple syrup) and vanilla extract until well blended.

      In another bowl, mix the rolled oats, flour, baking soda, cinnamon, and salt together. Gradually add the dry ingredients to the banana-peanut butter mixture, stirring just until combined.

        If using, fold in the dark chocolate chips and chopped nuts until evenly distributed throughout the mixture.

          Spread the mixture evenly into the prepared baking dish, smoothing the top with a spatula.

            Bake in the preheated oven for 20-25 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.

              Remove from the oven and let it cool in the pan for about 10-15 minutes before lifting it out using the parchment overhang. Once fully cooled, cut into bars.

                Store the bars in an airtight container at room temperature for up to 5 days, or refrigerate for longer shelf life.
