2 ripe peaches, sliced

1 cup bell peppers (mixed colors), sliced

1 cup sugar snap peas, trimmed

1 cup broccoli florets

1 medium zucchini, julienned

1 small red onion, thinly sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon sesame oil

2 tablespoons vegetable oil (for stir frying)

Salt and black pepper, to taste

Sesame seeds, for garnish

Fresh basil or mint, for garnish

Instructions
 

Prep the veggies: Wash and cut all vegetables as described. Make sure to slice the peaches just before adding them to preserve their freshness.

    Make the sauce: In a small bowl, whisk together the soy sauce, honey (or maple syrup), rice vinegar, and sesame oil. Set aside.

      Heat the wok/pan: In a large wok or a non-stick skillet, heat the vegetable oil over medium-high heat until shimmering.

        Sauté aromatics: Add the minced garlic and ginger to the hot oil. Stir-fry for about 30 seconds until fragrant, but be careful not to burn them.

          Add veggies: Toss in the red onion, bell peppers, and broccoli florets. Stir-fry for about 3-4 minutes until they start to soften but remain crisp.
