Peach Glazed Chicken Thighs

4 bone-in, skin-on chicken thighs

2 ripe peaches, pitted and diced

1/2 cup peach preserves

1/4 cup soy sauce

2 tablespoons apple cider vinegar

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon black pepper

1/2 teaspoon salt

1 tablespoon olive oil

Fresh mint, for garnish

Cooked rice or quinoa, for serving

Prepare the Marinade: In a mixing bowl, combine the diced peaches, peach preserves, soy sauce, apple cider vinegar, honey, minced garlic, grated ginger, black pepper, and salt. Stir well until all ingredients are well incorporated.

    Marinate the Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the peach marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour, preferably 4 hours for maximum flavor.

      Preheat the Oven: About 30 minutes before cooking, preheat your oven to 400°F (200°C).

        Sear the Chicken: In a large oven-safe skillet, heat olive oil over medium-high heat. Remove the chicken thighs from the marinade (keeping the marinade) and place them skin-side down in the hot skillet. Sear for about 5-7 minutes until the skin is crispy and golden brown. Flip the chicken thighs and sear the other side for another 3-4 minutes.

          Glaze and Bake: Once seared, pour the remaining marinade over the chicken thighs. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
