1 cup couscous

1 1/4 cups vegetable broth (or water)

2 ripe peaches, pitted and diced

1 cup crumbled feta cheese

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup fresh basil, chopped

1/4 cup fresh mint, chopped

1/4 cup almonds, sliced or slivered (toasted, if preferred)

3 tablespoons olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey (or maple syrup for a vegan option)

Salt and pepper to taste

Cook the Couscous: In a medium saucepan, bring the vegetable broth to a boil. Once boiling, remove it from heat, stir in the couscous, cover, and let it sit for about 5 minutes to absorb the liquid. Fluff with a fork once ready.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined.
