Ingredients

2 ripe peaches, pitted and cut into wedges

1 cup cherry tomatoes, halved

8 oz fresh mozzarella balls (bocconcini), drained

Fresh basil leaves (about 16-20 leaves)

3 tablespoons balsamic glaze

2 tablespoons extra virgin olive oil

Salt and pepper to taste

12 skewers (6-inch or longer)

Instructions

Prepare the Skewers: Start by assembling the skewers. Take a skewer and thread a peach wedge onto it, followed by a basil leaf, a mozzarella ball, a cherry tomato half, and another basil leaf. Repeat to fill the skewer, leaving some space at the end for easy handling. You can make 3-4 clusters per skewer, depending on your preference.

Season the Skewers: Once all skewers are assembled, drizzle them with extra virgin olive oil and sprinkle with salt and pepper to taste. This step enhances the flavors of the fresh ingredients.

Drizzle with Balsamic Glaze: Just before serving, lightly drizzle the balsamic glaze over the skewers. This adds a sweet and tangy flavor that pairs beautifully with the peaches and mozzarella.

Chill and Serve: For an even more refreshing option, place the skewers in the refrigerator for about 15-20 minutes before serving. This allows the flavors to meld and the skewers to cool down, making them a perfect summer appetizer.

Present: Arrange the skewers on a platter and garnish with additional fresh basil leaves if desired. Serve immediately and enjoy the delightful combination of flavors!
