Ingredients

4 boneless, skinless chicken breasts

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

2 tablespoons fresh parsley, finely chopped

1 tablespoon fresh basil, finely chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

2 large eggs

2 tablespoons olive oil

Lemon wedges (for serving, optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the Coating Mixture: In a large mixing bowl, combine the grated Parmesan cheese, breadcrumbs, parsley, basil, garlic powder, onion powder, oregano, salt, and pepper. Mix well until fully combined.

Prepare the Chicken Breasts: Pat the chicken breasts dry with paper towels. This helps the coating adhere better.

Dredge the Chicken: In a shallow bowl, whisk the eggs until well beaten. Dip each chicken breast into the egg mixture, ensuring it is fully coated, and then transfer it to the breadcrumb and Parmesan mixture. Press down gently to ensure the coating adheres well to each breast.

Heat the Olive Oil: In a large skillet, heat the olive oil over medium heat. Once the oil is hot, add the coated chicken breasts (you may need to work in batches to avoid overcrowding the pan). Sear each side for about 3-4 minutes until golden-brown and crispy.

Bake the Chicken: Transfer the seared chicken breasts to the prepared baking sheet. Bake in the preheated oven for 15-20 minutes or until the chicken is cooked through (internal temperature should reach 165°F or 75°C) and the crust is beautifully crisp.

Rest and Serve: Once cooked, remove from the oven and let the chicken rest for 5 minutes before slicing. Serve with lemon wedges for an extra zing!
