Ingredients

12 oz cheese tortellini (fresh or frozen)

1 cup breadcrumbs (preferably Italian-style)

1 cup grated Parmesan cheese

2 large eggs

1 tsp garlic powder

1 tsp dried oregano

½ tsp black pepper

½ tsp salt

Vegetable oil (for frying)

Fresh parsley (for garnish, optional)

Marinara sauce (for dipping)

Instructions

Preparation of Tortellini: If using frozen tortellini, cook them according to package instructions until al dente. Drain and allow to cool for a few minutes.

Breading Setup: In a medium bowl, whisk the eggs until well beaten. In another shallow dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, oregano, black pepper, and salt.

Coating the Tortellini: Take each cooked tortellini and dip it into the beaten eggs, allowing excess to drip off. Then, coat the tortellini in the breadcrumb and cheese mixture, pressing gently to ensure an even coating. Place breaded tortellini on a plate and continue until all are coated.

Frying Process: In a large skillet, heat about 1 inch of vegetable oil over medium-high heat. To test if the oil is ready, drop in a small piece of bread; it should sizzle immediately.

Fry the Tortellini: Working in batches, carefully add the breaded tortellini to the hot oil. Fry for about 3–4 minutes on each side or until they are golden brown and crispy. Use a slotted spoon to remove the fried tortellini and place them on a paper towel-lined plate to drain excess oil.

Serve: Once all tortellini are fried, arrange them on a serving platter. Garnish with finely chopped fresh parsley if desired, and serve warm with marinara sauce for dipping.
