Parmesan Crusted Pork Chops

4 bone-in pork chops (about 1 inch thick)

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper, to taste

2 large eggs

2 tablespoons Dijon mustard

1/4 cup all-purpose flour

Olive oil or butter, for frying

Fresh parsley, chopped (for garnish)

Prepare the Pork Chops: Pat the pork chops dry with paper towels and season both sides generously with salt and pepper.

    Set Up Breading Station:

      - In a shallow bowl, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, smoked paprika, and dried Italian herbs. Mix well and set aside.

        - In another bowl, whisk together the eggs and Dijon mustard until smooth.

          - Place the flour in a third shallow dish.

            Bread the Chops:

              - Dredge each pork chop in flour, making sure to coat both sides and shake off the excess.

                - Dip the floured chop into the egg mixture, allowing any excess to drip off.

                  - Finally, coat the pork chop in the Parmesan and panko mixture, pressing firmly to ensure it adheres well. Repeat with all chops.

                    Heat the Pan: In a large skillet, heat a couple of tablespoons of olive oil or butter over medium heat until hot and shimmering.

                      Cook the Chops:

                        - Add the breaded pork chops to the skillet, cooking in batches if necessary. Fry for about 4-5 minutes on each side, or until the coating is golden brown and the pork reaches an internal temperature of 145°F (63°C).

                          - Transfer the cooked chops to a paper towel-lined plate to soak up any excess oil.

                            Serve: Garnish the crispy Parmesan crusted pork chops with fresh chopped parsley before serving. These are excellent paired with a side of roasted vegetables or a fresh garden salad.
