Paprika with Ground Beef and Rice

1 lb ground beef

2 cups jasmine rice

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

2 tablespoons sweet paprika

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

1 can (14.5 oz) diced tomatoes, undrained

3 cups beef broth or water

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (to serve)

Instructions
 

Prepare the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a saucepan, combine the rice with 4 cups of water, bring to a boil, and reduce heat to low. Cover and simmer for about 15 minutes or until the rice is tender.

    Cook the Ground Beef: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and diced red bell pepper, sautéing until the onion becomes translucent, about 4-5 minutes.

      Add Garlic and Spices: Stir in the minced garlic, sweet paprika, smoked paprika, oregano, salt, and black pepper. Cook for an additional minute until the spices are fragrant.

        Brown the Beef: Increase the heat to medium-high and add the ground beef to the skillet. Use a wooden spoon to break it up and cook until it’s browned and fully cooked, about 6-8 minutes. Drain excess fat if necessary.

          Incorporate Tomatoes and Broth: Pour in the can of diced tomatoes (with juice) and beef broth. Stir well to combine and bring the mixture to a simmer. Reduce the heat to low and let it simmer for about 10 minutes, allowing the flavors to meld together.

            Combine with Rice: Once the rice is cooked, fluff it with a fork and then mix it gently into the skillet with the beef mixture until everything is well combined.
