Ingredients

1 cup all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk (or 1 cup milk + 1 tablespoon vinegar)

1 large egg

2 tablespoons melted butter (plus extra for cooking)

8 breakfast sausages (links or patties, cooked and crumbled)

1/2 cup maple syrup (for serving)

Optional toppings: powdered sugar, fruit, or whipped cream

Instructions

Prepare the Batter: In a medium bowl, combine the all-purpose flour, sugar, baking powder, baking soda, and salt. Whisk until well combined.

Mix Wet Ingredients: In another bowl, mix the buttermilk, egg, and melted butter until fully combined.

Combine Ingredients: Pour the wet mixture into the dry ingredients. Gently stir until just combined; do not overmix. The batter can be slightly lumpy.

Add Sausage: Fold in the crumbled breakfast sausages until evenly distributed throughout the batter.

Preheat the Pan: Heat a non-stick skillet or a griddle over medium heat. Add a small amount of butter to coat the surface.

Cook the Bites: Pour 2 tablespoons of batter per pancake onto the skillet for small bites. Flatten slightly if desired, and cook for about 2-3 minutes or until bubbles begin to form on the surface. Flip and cook for another 1-2 minutes until golden brown and cooked through.

Serve Warm: Transfer the pancake sausage bites to a plate and serve immediately with maple syrup drizzled on top or on the side for dipping. Feel free to garnish with powdered sugar, fresh fruit, or whipped cream if desired.
