Oven-Roasted Sweet Potatoes with Cinnamon

4 medium sweet potatoes, peeled and cubed

3 tablespoons olive oil

2 teaspoons cinnamon

1 teaspoon nutmeg

2 tablespoons maple syrup

Salt and pepper to taste

1 tablespoon fresh rosemary or thyme, chopped (optional)

¼ cup chopped pecans or walnuts (optional for crunch)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Sweet Potatoes: In a large mixing bowl, add the cubed sweet potatoes. Drizzle with olive oil, and sprinkle with cinnamon, nutmeg, salt, and pepper.

      Add Sweetness: Pour in the maple syrup and toss everything together until the sweet potatoes are evenly coated.

        Add Herbs: If using rosemary or thyme, add it now to the sweet potato mixture and stir well.

          Arrange on Baking Sheet: Spread the sweet potatoes in a single layer on a parchment-lined baking sheet. Ensure there’s space between the pieces to promote even roasting.

            Roast: Place the baking sheet in the preheated oven and roast for about 25-30 minutes. Toss the sweet potatoes halfway through for even cooking. They should be tender inside and slightly caramelized on the outside.

              Add Nuts (Optional): If using, sprinkle the chopped pecans or walnuts over the sweet potatoes in the last 5 minutes of cooking to toast them lightly.

                Serve: Once done, remove from the oven, let cool for a minute, and serve warm as a delightful side dish or a healthy snack.
