Ingredients

1 ½ cups all-purpose flour

½ cup granulated sugar

2 teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

2 tablespoons poppy seeds

1 cup buttermilk

⅓ cup vegetable oil

1 large egg

Zest of 1 large orange

1 teaspoon vanilla extract

Juice of 1 large orange (about ¼ cup)

Optional: ¼ cup powdered sugar (for glaze)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it well.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and poppy seeds until well combined.

Combine Wet Ingredients: In a separate medium bowl, whisk together the buttermilk, vegetable oil, egg, orange zest, vanilla extract, and fresh orange juice until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and use a spatula or wooden spoon to gently mix until just combined. Avoid over-mixing; a few lumps are fine.

Fill Muffin Tin: Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.

Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes or until a toothpick inserted into the center of a muffin comes out clean.

Cool: Once baked, remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Optional Glaze: If desired, mix the powdered sugar with a tiny bit of orange juice to create a simple glaze. Drizzle over the cooled muffins for added sweetness.

Serve: These muffins are best enjoyed warm, but they can be stored in an airtight container at room temperature for up to 3 days.
