8 oz (225g) spaghetti or linguine

2 tablespoons olive oil

1 lb (450g) salmon fillets, skinless, cut into bite-sized pieces

3 cloves garlic, minced

1 cup cherry tomatoes, halved

2 cups vegetable or chicken broth

1 cup heavy cream

1 teaspoon dried oregano

1 teaspoon dried basil

Zest of 1 lemon

Juice of 1 lemon

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese, for serving (optional)

Sauté the Salmon: In a large pot, heat olive oil over medium heat. Add the salmon pieces and cook for about 3-4 minutes, or until they begin to turn golden brown. Remove the salmon from the pot and set aside.

    Sauté the Aromatics: In the same pot, add the minced garlic and cook for about 1 minute until fragrant. Be careful not to burn it.

      Add the Tomatoes and Spices: Stir in the halved cherry tomatoes, dried oregano, dried basil, lemon zest, salt, and pepper. Cook for an additional 2-3 minutes until the tomatoes soften.

        Combine Pasta and Broth: Pour in the vegetable or chicken broth and bring to a gentle boil. Add the spaghetti or linguine, making sure it's submerged in the liquid. Reduce the heat to a simmer and cover the pot. Cook for about 8-10 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.

          Add Cream and Salmon: Once the pasta is cooked, pour in the heavy cream and stir well to combine. Gently fold in the cooked salmon pieces, along with lemon juice, mixing everything together to coat the pasta. Cook for another 2-3 minutes until heated through.

            Garnish and Serve: Remove from heat. Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley and a sprinkle of grated Parmesan cheese if desired.
