4 bone-in, skin-on chicken thighs

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup long-grain rice (such as basmati)

2 cups chicken broth

1/2 cup fresh lemon juice (about 2 large lemons)

Zest of 1 lemon

1 teaspoon dried oregano

1/2 teaspoon paprika

Salt and pepper to taste

1 cup cherry tomatoes, halved

1/2 cup Kalamata olives, pitted and halved

1/4 cup freshly chopped parsley (for garnish)

Sear the Chicken: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the chicken thighs with salt, pepper, paprika, and oregano. Once the oil is hot, add the chicken thighs skin-side down and sear for about 5-6 minutes until golden brown. Flip and sear the other side for an additional 4-5 minutes. Remove the chicken and set aside on a plate.

    Sauté Aromatics: In the same pot, reduce the heat to medium. Add the chopped onion and cook until soft and translucent, about 3-4 minutes. Add the minced garlic and sauté for an additional 1 minute until fragrant.

      Toast the Rice: Stir in the rice and cook for 1-2 minutes to slightly toast it, stirring constantly. This step enhances the flavor of the rice.

        Add Liquids and Chicken: Pour in the chicken broth, lemon juice, lemon zest, and season with a pinch of salt and pepper. Return the chicken thighs to the pot, placing them on top of the rice mixture. Bring to a gentle boil.
