One-Pan Southwest Chicken and Black Beans

1 lb (450g) boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper, to taste

1 bell pepper (red or yellow), diced

1 medium onion, diced

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 cup corn (fresh, frozen, or canned)

Juice of 1 lime

Fresh cilantro, for garnish

Optional: sliced avocado or shredded cheese for serving

Instructions
 

Prepare the Chicken: In a small bowl, mix together the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Rub this spice mixture all over the chicken breasts, ensuring an even coat.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken breasts and sear them for about 4-5 minutes on each side, or until they are golden brown. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the diced onion and bell pepper. Sauté for about 3-4 minutes until the vegetables begin to soften. Add the corn and continue cooking for another 2 minutes.

        Combine Ingredients: Add the black beans, diced tomatoes (with their juice), and lime juice to the skillet. Stir to combine all the ingredients and create a colorful mixture.

          Return Chicken to Skillet: Nestle the seared chicken breasts back into the skillet, spooning some of the bean mixture over the top.

            Simmer: Cover the skillet with a lid and reduce the heat to low. Let it simmer for about 15-20 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).

              Garnish & Serve: Once cooked, remove from heat and sprinkle fresh cilantro over the top. Serve hot with sliced avocado or shredded cheese, if desired.
