1 lb (450g) Italian sausage (pork, chicken, or turkey)

1 medium onion, sliced

2 bell peppers (red and yellow), sliced

1 zucchini, diced

1 cup cherry tomatoes, halved

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh basil, for garnish

Grated Parmesan cheese (optional)

Preheat the Pan: Heat a large skillet over medium heat and add the olive oil.

    Cook the Sausage: Once the oil is hot, add the sausages to the pan. Cook for about 6-8 minutes, turning occasionally until browned and cooked through. Remove from the skillet and slice into bite-sized pieces.

      Sauté Vegetables: In the same skillet, add the sliced onion and bell peppers. Sauté for 5-7 minutes, or until they start to soften.

        Add Zucchini and Garlic: Stir in the diced zucchini and minced garlic. Cook for an additional 3-4 minutes, until the zucchini is tender.

          Combine Ingredients: Return the sliced sausages to the skillet and add the cherry tomatoes, oregano, smoked paprika, salt, and pepper. Stir well to combine all ingredients.

            Simmer: Allow the mixture to simmer for about 5 minutes until the tomatoes soften and release their juices, creating a flavorful sauce.

              Serve: Remove from heat, garnish with fresh basil and, if desired, sprinkle with grated Parmesan cheese before serving.
