For the Salmon and Broccoli:

4 salmon fillets (approximately 6 ounces each)

2 cups broccoli florets

4 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

Lemon wedges for serving

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a small bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, dried oregano, salt, and black pepper until well combined.

      Marinate the Salmon: Place the salmon fillets in a large mixing bowl or a Ziplock bag. Pour half of the marinade over the salmon, making sure each fillet is well coated. Allow to marinate for at least 15 minutes (or up to 1 hour in the refrigerator for more flavor).

        Prepare the Broccoli: On a large baking sheet, place the broccoli florets. Drizzle with the remaining marinade and toss to combine. Make sure the broccoli is evenly coated.

          Add Salmon to the Pan: After marinating, place the salmon fillets on the same baking sheet, directly on top of the broccoli, skin-side down. Arrange so there’s some space between each fillet for even cooking.

            Bake: Roast in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the broccoli is tender and slightly crisp.

              Serve: Remove from the oven and garnish with fresh parsley and lemon wedges. Serve immediately and enjoy this bright, flavorful one-pan meal!
