4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

4 cloves garlic, minced

1 large lemon (juice and zest)

1 teaspoon dried oregano

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup low-sodium chicken broth

2 cups fresh spinach (optional, for serving)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a small bowl, mix the olive oil, minced garlic, lemon juice and zest, dried oregano, smoked paprika, salt, and black pepper.

      Marinate the Chicken: Pat the chicken thighs dry with paper towels. Rub the marinade all over the chicken thighs, ensuring they are well-coated.

        Sear the Chicken: In a large oven-safe skillet, heat a bit of oil over medium-high heat. Add the chicken thighs skin-side down and sear for about 5-7 minutes until the skin is golden brown and crispy. Flip the thighs and cook for an additional 3 minutes on the other side.

          Deglaze the Pan: Remove the chicken thighs and set aside. Pour the chicken broth into the skillet, scraping up any browned bits from the bottom of the pan.

            Combine and Add Chicken: Return the chicken thighs to the skillet, skin-side up. Spoon some of the broth over the chicken to keep it moist during roasting.

              Bake in the Oven: Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).
