Ingredients

4 boneless, skinless chicken breasts

Salt and black pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup sun-dried tomatoes, chopped

1 cup spinach, fresh

1 cup heavy cream

1 cup chicken broth

½ cup grated parmesan cheese

1 teaspoon Italian seasoning

¼ teaspoon red pepper flakes (optional)

Fresh basil, for garnish

Instructions

Prepare the Chicken: Season the chicken breasts with salt and black pepper on both sides.

Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside.

Sauté the Garlic and Tomatoes: In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for about 1-2 minutes until the garlic is fragrant.

Add Spinach and Cream: Toss in the fresh spinach, stirring until wilted. Then, pour in the heavy cream and chicken broth, mixing well.

Incorporate Cheese and Seasonings: Add grated parmesan cheese, Italian seasoning, and red pepper flakes (if using). Stir until the cheese melts and the sauce thickens, about 3-5 minutes.

Return Chicken to the Skillet: Place the seared chicken back into the skillet, spooning the creamy sauce over the top. Let it simmer for about 2-3 minutes to heat through.

Final Touch: Garnish with fresh basil before serving for an aromatic finish.
