2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and freshly ground black pepper, to taste

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 cup grated Pecorino Romano cheese (plus extra for serving)

12 ounces spaghetti or fettuccine

1 cup frozen peas

4 large egg yolks

Fresh parsley, chopped (for garnish)

Optional: Crushed red pepper flakes (for added heat)

Instructions
 

Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces seasoned with salt and pepper, cooking until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

    Sauté Garlic: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant, but do not let it brown.

      Add Broth and Cream: Pour in the chicken broth and heavy cream, stirring to combine. Scrape up any browned bits from the bottom of the skillet to enhance the flavor.

        Cook the Pasta: Bring the mixture to a simmer, then add the spaghetti or fettuccine. Cook according to package instructions, stirring occasionally, until the pasta is al dente and the sauce thickens slightly, about 9-11 minutes.

          Add Cheeses and Peas: Stir in the grated Pecorino Romano and frozen peas, mixing until the cheese is melted and everything is well combined.

            Prepare Egg Mixture: In a bowl, whisk together the egg yolks. Take a small amount of the hot pasta mixture and slowly whisk it into the egg yolks to temper them (this prevents curdling). Gradually whisk the yolk mixture back into the skillet, stirring quickly to create a creamy sauce.

              Combine Chicken and Season: Return the cooked chicken to the skillet, stirring until well incorporated. Taste and adjust seasoning with more salt, pepper, and optional crushed red pepper flakes if desired.
