One-Pan Cheesy Chicken and Rice Casserole

1 lb (450g) boneless, skinless chicken breasts, diced

1 cup long-grain white rice, rinsed

1 medium onion, chopped

3 cloves garlic, minced

2 cups chicken broth

1 cup frozen mixed vegetables (peas, carrots, corn)

1 cup shredded sharp cheddar cheese

1 cup cream of chicken soup (or homemade equivalent)

1 teaspoon paprika

1 teaspoon dried thyme

1 teaspoon garlic powder

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté Chicken: In a large oven-safe skillet or Dutch oven, heat the olive oil over medium-high heat. Add the diced chicken and season with salt, pepper, paprika, and garlic powder. Sauté until the chicken is browned on the outside, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Cook Aromatics: In the same skillet, add the chopped onion and minced garlic. Sauté for about 2-3 minutes, or until the onion is translucent.

        Combine Ingredients: Stir in the rinsed rice, chicken broth, frozen mixed vegetables, cream of chicken soup, and thyme. Mix well to combine all ingredients.

          Add Chicken Back: Return the sautéed chicken to the skillet, giving everything a good stir to ensure it is evenly distributed.

            Bake: Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Bake for about 25-30 minutes, or until the rice is tender and has absorbed most of the liquid.

              Add Cheese: Remove the skillet from the oven and uncover. Sprinkle the shredded cheddar cheese evenly over the top. Return to the oven, uncovered, for an additional 5-7 minutes, or until the cheese is melted and bubbly.

                Garnish and Serve: Once done, remove from the oven and let it sit for a few minutes. Garnish with chopped fresh parsley before serving.
