One-Pan Cheesy Beef and Quinoa Casserole

1 lb (450g) ground beef

1 cup quinoa, rinsed and drained

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (15 oz) diced tomatoes, undrained

2 cups beef broth

1 cup shredded cheddar cheese (plus extra for topping)

1 teaspoon dried oregano

1 teaspoon ground cumin

½ teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preparation: In a large oven-safe skillet or frying pan, heat the olive oil over medium heat. Add the diced onion, bell pepper, and garlic. Sauté for about 3-4 minutes until the vegetables are softened and fragrant.

    Cook the Beef: Add the ground beef to the skillet. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Season with salt, pepper, oregano, cumin, and smoked paprika. Stir to combine and cook for another minute.

      Add Quinoa and Tomatoes: Stir in the rinsed quinoa, diced tomatoes (with their juices), and beef broth. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and simmer for about 15-20 minutes, or until the quinoa has absorbed most of the liquid and is fluffy. Stir occasionally to prevent sticking.

        Add Cheese: Once the quinoa is cooked, remove the skillet from the heat. Stir in 1 cup of cheddar cheese until melted and combined. Taste and adjust seasonings if needed.

          Bake for Extra Cheese: Preheat your oven to 375°F (190°C). Preheat a baking dish if necessary. Sprinkle an additional ½ cup of shredded cheese on top of the beef and quinoa mixture. Place the skillet in the oven and bake for 10-15 minutes, or until the top is bubbly and golden.
