1 medium butternut squash, peeled, seeded, and cubed (about 4 cups)

2 medium apples (such as Honeycrisp or Granny Smith), cored and sliced

1 medium red onion, thinly sliced

3 cloves garlic, minced

3 tbsp olive oil

1 tsp ground cinnamon

½ tsp ground nutmeg

½ tsp ground ginger

Salt and pepper to taste

1 cup vegetable broth (or chicken broth)

½ cup dried cranberries

½ cup chopped walnuts or pecans (optional)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Ingredients: In a large mixing bowl, combine the cubed butternut squash, apple slices, and sliced red onion. Add minced garlic.

      Mix Seasonings: In a small bowl, whisk together the olive oil, cinnamon, nutmeg, ginger, salt, and pepper. Pour this mixture over the squash and apple mixture. Toss everything until well coated.

        Arrange in Pan: Spread the apple and squash mixture evenly in a large baking dish or a rimmed sheet pan.

          Add Broth: Pour the vegetable broth evenly over the top of the mixture. This will help steam the vegetables as they bake.

            Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the butternut squash is tender and the apples are soft. Stir halfway through baking to ensure even cooking.

              Add Cranberries and Nuts: In the last 10 minutes of baking, add the dried cranberries and chopped walnuts or pecans to the pan, mixing gently.
