Olive Garden Chicken Scampi

2 large chicken breasts, boneless and skinless

1 tablespoon Olive Oil

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust for spice preference)

1 cup white wine (preferably a dry one like Sauvignon Blanc)

1/2 cup chicken broth

1 cup heavy cream

1 teaspoon lemon juice

8 oz linguine pasta (or spaghetti)

1/2 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

1/4 cup fresh basil, chopped

Salt and pepper, to taste

Lemon slices, for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the linguine or spaghetti according to package directions until al dente. Drain and set aside.

    Prepare Chicken: While the pasta cooks, slice the chicken breasts into thin strips and season with salt and pepper.

      Sauté Chicken: In a large skillet, heat 1 tablespoon of olive oil and 2 tablespoons of butter over medium-high heat. Once hot, add the chicken strips and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

        Make the Scampi Sauce: In the same skillet, reduce the heat to medium and add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant, stirring constantly.

          Deglaze: Pour in the white wine, stirring to deglaze the skillet, scraping up any brown bits from the bottom. Let it simmer for 2-3 minutes to reduce slightly.

            Add Broth and Cream: Stir in the chicken broth and heavy cream, and cook for another 3-4 minutes until the sauce begins to thicken.

              Combine Ingredients: Add the cooked chicken back into the skillet along with the cooked pasta, lemon juice, and cherry tomatoes. Toss everything together until well coated in the sauce. Cook for an additional 2-3 minutes to warm through.

                Finish and Serve: Stir in the grated Parmesan cheese and chopped basil, adjusting seasoning with salt and pepper as necessary. Remove from heat. Serve the Chicken Scampi hot, garnished with lemon slices and additional basil if desired.
