1 lb ground beef

4 medium-sized potatoes, thinly sliced

1 cup onion, diced

2 cups frozen mixed vegetables (peas, corn, and carrots)

1 can (10.5 oz) cream of mushroom soup

1 cup beef broth

1 tsp garlic powder

1 tsp dried thyme

Salt and pepper to taste

1 cup shredded cheddar cheese

½ cup milk

½ cup sour cream

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Brown the Beef: In a large skillet over medium heat, add the ground beef and cook until fully browned, about 5-7 minutes. Drain any excess fat.

      Sauté the Onions: Add the diced onions to the skillet with the beef. Sauté until the onions are translucent, about 3-4 minutes. Stir in the garlic powder, thyme, salt, and pepper.

        Mix the Base: In a large mixing bowl, combine the beef mixture with the cream of mushroom soup, beef broth, milk, and sour cream. Stir until everything is well combined.

          Prepare the Casserole Dish: Layer half of the sliced potatoes at the bottom of a greased 9x13 inch casserole dish. Spread the frozen mixed vegetables evenly over the potatoes, followed by the beef mixture.

            Add Remaining Potatoes: Top the beef mixture with the remaining sliced potatoes, slightly overlapping them for an even layer. Sprinkle with extra salt and pepper to taste.

              Cover and Bake: Cover the casserole dish with aluminum foil and bake in the preheated oven for 1 hour.
