Ingredients

2 cups fresh or frozen blueberries

1 cup granulated sugar

1 cup heavy cream

1 cup sweetened condensed milk

1 teaspoon vanilla extract

1 tablespoon lemon juice

A pinch of salt

Instructions

Prepare the Blueberry Mixture: In a medium saucepan, combine the blueberries, 1/2 cup of the granulated sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the blueberries break down and the mixture becomes syrupy, about 5-7 minutes. You can lightly mash some of the blueberries with the back of a spoon for a chunkier texture. Remove from heat and allow to cool completely.

Whip the Cream: In a large mixing bowl, whip the heavy cream using a hand mixer or stand mixer on high speed until stiff peaks form, about 3-5 minutes.

Combine Sweetened Condensed Milk: In a separate bowl, combine the sweetened condensed milk, remaining 1/2 cup of sugar, vanilla extract, and a pinch of salt. Mix until well incorporated.

Fold Ingredients Together: Gently fold the whipped cream into the sweetened condensed milk mixture using a spatula. Do this carefully to maintain the airiness of the whipped cream.

Add Blueberry Mixture: Once combined, gently fold in the cooled blueberry mixture until it’s swirled throughout the ice cream base but not completely blended, allowing some blueberry bits to remain visible.

Freeze: Pour the mixture into a freezer-safe container. Smooth the top with a spatula, cover with a lid or plastic wrap, and freeze for at least 6 hours or overnight until firm.

Serve: Once frozen, scoop the no-churn blueberry ice cream into bowls or cones. Optionally, top with fresh blueberries or a drizzle of honey.
