For the crust:

1 cup crushed graham crackers

1/4 cup unsalted butter, melted

2 tablespoons granulated sugar

16 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

For the turtle topping:

1 cup caramel sauce

1/2 cup chopped pecans

1/2 cup semi-sweet chocolate chips

Instructions
 

Prepare the crust:

    - In a mixing bowl, combine crushed graham crackers, melted butter, and granulated sugar. Stir until well combined.

      - Press the mixture firmly into the bottom of mini cheesecake molds or paper cupcake liners. Aim for a layer about 1/4 inch thick. Place in the refrigerator to set while you prepare the filling.

        Make the cheesecake filling:

          - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

            - Gradually add in the powdered sugar and vanilla extract, mixing well until combined.

              - In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture using a spatula, being careful not to deflate the whipped cream.

                Assemble the cheesecakes:

                  - Spoon the cheesecake filling evenly over the prepared crusts in the mini molds, smoothing the tops with a spatula. Chill in the refrigerator for at least 2 hours to set.

                    Add the turtle topping:

                      - Once the cheesecakes are firm, drizzle each with caramel sauce and sprinkle with chopped pecans. Melt the chocolate chips in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth. Drizzle the melted chocolate over the cheesecake tops to finish.

                        Chill and serve:
