Ingredients

2 cups fresh strawberries, hulled and sliced

1 tablespoon sugar (adjust based on sweetness of strawberries)

1 cup heavy whipping cream

1 cup Greek yogurt (vanilla or plain)

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

1 cup granola (your choice of flavor)

Fresh mint leaves, for garnish (optional)

Instructions

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries with the tablespoon of sugar. Toss gently and let them sit for about 10-15 minutes until they release their juices and become syrupy.

Whip the Cream: In a large bowl, pour in the heavy whipping cream. Use an electric mixer to whip the cream on medium-speed until soft peaks form. Be careful not to overwhip; it should be fluffy but not grainy.

Combine Yogurt and Honey: In another bowl, mix the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth and well combined.

Fold Ingredients: Gently fold the whipped cream into the yogurt mixture until fully incorporated. This creates a light and airy parfait base.

Layer the Parfaits: In clear cups or glasses, start layering the parfaits. Begin with a spoonful of the yogurt mixture, followed by a layer of the macerated strawberries, and then a layer of granola. Repeat the layers until the glasses are filled, finishing with a layer of strawberries on top.

Chill: Cover the parfaits with plastic wrap and refrigerate for at least 30 minutes to an hour to allow the flavors to meld and the granola to soften slightly.

Serve and Garnish: Before serving, add a few whole strawberries on top of each parfait and a sprig of fresh mint for a pop of color.
