Ingredients

24 Oreo cookies (plus extra for garnish)

½ cup unsalted butter, melted

16 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

8 Oreo cookies, crushed (for the filling)

Instructions

Prepare the Crust:

    - In a food processor, crush 24 Oreo cookies into fine crumbs.

      - Mix the cookie crumbs with the melted butter until well combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Set aside.

          Make the Cheesecake Filling:

            - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

              - Gradually add the powdered sugar and vanilla extract, mixing until combined and free of lumps.

                Whip the Cream:

                  - In another bowl, whip the heavy whipping cream using an electric mixer until stiff peaks form. This should take about 3-5 minutes.

                    Combine Mixtures:

                      - Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the whipped cream.

                        - Add in the crushed Oreo cookies and fold until evenly distributed throughout the filling.

                          Assemble the Cheesecake:

                            - Pour the cheesecake filling into the prepared crust, spreading it evenly with a spatula.

                              - Smooth the top and add any extra crushed Oreos for garnish.

                                Chill:

                                  - Cover the springform pan with plastic wrap and refrigerate for at least 4 hours, or until firm.

                                    Serve:

                                      - Once set, carefully remove the cheesecake from the springform pan. Slice and serve each piece with a garnish of additional Oreo cookies on top. Enjoy your delightful treat!
