1 cup (120g) digestive biscuits or graham crackers, crushed

1/2 cup (115g) unsalted butter, melted

1/4 cup (30g) brown sugar

For the Caramel Layer:

1 can (14 oz) sweetened condensed milk

1/4 cup (60g) unsalted butter

1/2 cup (100g) brown sugar

1/2 teaspoon vanilla extract

Pinch of salt

For the Chocolate Topping:

1 cup (170g) dark chocolate chips

1 tablespoon coconut oil (optional for shine)

Instructions
 

Prepare the Base:

    - In a medium mixing bowl, combine the crushed digestive biscuits, melted butter, and brown sugar. Mix until the crumbs are evenly coated.

      - Press the mixture firmly into the bottom of a lined 8x8 inch square baking pan. Use the back of a measuring cup to compact it well. Place this in the refrigerator to set while you prepare the caramel.

        Make the Caramel Layer:

          - In a saucepan over medium heat, combine the sweetened condensed milk, unsalted butter, brown sugar, and a pinch of salt.

            - Stir continuously until the mixture comes to a gentle boil and thickens, about 5-7 minutes. Make sure to scrape the sides to prevent sticking.

              - Once thick, remove from heat and stir in the vanilla extract. Pour the caramel over the chilled biscuit base, spreading it evenly. Refrigerate for about 30-45 minutes to let the caramel set.

                Prepare the Chocolate Topping:
