1 cup rolled oats

½ cup unsweetened shredded coconut

½ cup almond butter (or any nut/seed butter of choice)

¼ cup honey or maple syrup

2 tablespoons fresh lemon juice

Zest of 1 large lemon

1 teaspoon vanilla extract

¼ teaspoon sea salt

½ cup chopped nuts (almonds, cashews, or walnuts) for added crunch (optional)

Additional shredded coconut for rolling (optional)

Instructions
 

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, sea salt, and any chopped nuts if using. Mix until evenly distributed.

    Mix Wet Ingredients: In a separate bowl, whisk together the almond butter, honey (or maple syrup), fresh lemon juice, lemon zest, and vanilla extract until smooth and well combined.

      Combine Mixtures: Pour the wet mixture into the bowl of dry ingredients. Stir with a spatula or your hands until everything is well incorporated and the mixture is sticky. If you find the mixture too dry, add a splash more lemon juice or almond butter.
