1 cup almond flour

1 cup medjool dates (pitted)

1/2 cup unsweetened cocoa powder

1/4 cup pure maple syrup

1/4 cup melted coconut oil

1/2 teaspoon peppermint extract

1/4 teaspoon sea salt

1/2 cup dark chocolate chips (dairy-free if required)

2 tablespoons coconut milk (or cream)

Optional: Crushed peppermint candies for garnishing

Prepare the Base: In a food processor, combine almond flour, medjool dates, cocoa powder, maple syrup, melted coconut oil, peppermint extract, and sea salt. Blend until the mixture is crumbly but holds together when pressed between your fingers.

    Set the Base: Line an 8x8-inch square baking dish with parchment paper, leaving some excess to hang over the sides for easy removal. Press the chocolate mixture firmly into the bottom of the dish in an even layer. Use a spatula or your hands to smooth out the top. Place the dish in the refrigerator to firm up while preparing the chocolate layer.

      Make the Chocolate Topping: In a small saucepan over low heat, melt the dark chocolate chips with coconut milk, stirring occasionally until smooth and creamy. Remove from heat and let it cool slightly.

        Assemble the Bars: Once the base has set for about 30 minutes, pour the melted chocolate topping over the pressed base. Use a spatula to spread it evenly. If desired, sprinkle crushed peppermint candies on top for an added crunch and festive look.
