Ingredients

1 cup crushed graham crackers

4 tablespoons unsalted butter, melted

1 tablespoon granulated sugar

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 cup cherry pie filling (store-bought or homemade)

Fresh cherries for garnish (optional)

Mint leaves for garnish (optional)

Instructions

Prepare the Crust: In a medium bowl, combine the crushed graham crackers, melted butter, and granulated sugar. Mix well until the crumbs are evenly coated.

Assemble the Cups: In serving cups or jars, evenly distribute the graham cracker mixture at the bottom, pressing down gently to create a firm crust. Set aside.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until well combined.

Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined, being careful not to deflate the cream.

Layer the Filling: Spoon or pipe the cheesecake filling evenly over the crusts in the serving cups. Smooth the tops with a spatula for an even finish.

Add Cherry Topping: Top each cheesecake cup with a generous spoonful of cherry pie filling, spreading it evenly over the top.

Chill & Serve: Refrigerate the cheesecake cups for at least 2 hours to allow them to set. Before serving, garnish with fresh cherries and mint leaves if desired.
