Mushroom Swiss Cheese Meatloaf

1 lb ground beef (or substitute with ground turkey)

1 cup finely chopped mushrooms (cremini or button)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup breadcrumbs (panko or regular)

1 cup Swiss cheese, shredded

1 large egg

2 tablespoons Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup ketchup (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat oven: Preheat your oven to 350°F (175°C) and prepare a loaf pan by lightly greasing it with cooking spray or oil.

    Sauté vegetables: In a medium skillet over medium heat, add a tablespoon of oil. Sauté the chopped onions and minced garlic for about 3 minutes until they become translucent. Add the chopped mushrooms and continue to cook for another 5 minutes until softened and most of the moisture has evaporated. Remove from heat and allow to cool slightly.

      Combine ingredients: In a large mixing bowl, combine the ground beef, sautéed onion and mushroom mixture, breadcrumbs, shredded Swiss cheese, egg, Worcestershire sauce, thyme, smoked paprika, salt, and pepper. Use your hands or a spatula to mix until well combined, but avoid overmixing to keep the meatloaf tender.

        Shape the meatloaf: Transfer the meat mixture into the prepared loaf pan. Shape it into a loaf form, ensuring the top is even and smooth.

          Add ketchup topping: Spread ketchup evenly over the top of the meatloaf, helping to keep it moist while baking and adding a layer of flavor.

            Bake: Place the meatloaf in the preheated oven and bake for 50-60 minutes, or until the internal temperature reaches 160°F (70°C).

              Rest before slicing: Once done, remove from the oven and let it rest for about 10 minutes to firm up.
