Mushroom and Spinach Stuffed Chicken Breasts

4 boneless, skinless chicken breasts

2 cups fresh spinach, chopped

1 cup mushrooms, finely chopped (cremini or button)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1/2 cup shredded mozzarella cheese (for topping)

Fresh basil leaves (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Vegetables: In a skillet over medium heat, add the olive oil. Once hot, sauté the chopped onion until translucent (about 3-4 minutes). Add the minced garlic and cook for an additional minute. Then, add the chopped mushrooms and cook until they are soft and any liquid has evaporated (about 5 minutes). Finally, stir in the chopped spinach and cook just until wilted. Remove from heat and let cool slightly.

      Make the Filling: In a mixing bowl, combine the sautéed vegetables with the ricotta cheese, grated Parmesan cheese, dried oregano, salt, and black pepper. Mix until well combined.

        Prepare the Chicken: Place each chicken breast between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to gently pound the chicken to an even thickness (about 1/2 inch). Season each breast with salt and pepper on both sides.

          Stuff the Chicken: Spoon an even amount of the mushroom and spinach filling onto the center of each chicken breast. Fold the sides of the chicken over the filling and secure with toothpicks or kitchen twine to hold the filling inside.

            Bake the Chicken: Place the stuffed chicken breasts in a greased baking dish. Sprinkle the shredded mozzarella cheese on top of each stuffed breast. Cover the dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.

              Serve: Remove from the oven and let rest for about 5 minutes. Garnish with fresh basil leaves if desired, and serve warm.
