6 large eggs

1 cup fresh spinach, chopped

1 cup mushrooms, sliced (cremini or button mushrooms work well)

1/2 cup onion, finely chopped

1/2 cup bell pepper, diced (red or yellow for sweetness)

1/2 cup shredded cheese (cheddar, feta, or goat cheese)

1/4 cup milk (whole or your choice)

3 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large, oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper; sauté for about 3-4 minutes until softened.

      Add Mushrooms and Spinach: Stir in the sliced mushrooms and cook for an additional 4-5 minutes until the mushrooms are browned. Add the minced garlic and chopped spinach, cooking until the spinach wilts, around 1-2 minutes. Season with salt and pepper to taste.

        Prepare the Egg Mixture: In a bowl, whisk together the eggs, milk, and a pinch of salt and pepper until well combined. If using, stir in the cheese so it’s evenly distributed.

          Combine and Cook: Pour the egg mixture evenly over the sautéed vegetables in the skillet. Using a spatula, gently stir the mixture to ensure even distribution. Allow it to cook on the stovetop for about 3-4 minutes, just until the edges start to set.
