1 pound fresh figs, stems removed and chopped

1 cup granulated sugar

1 tablespoon fresh lemon juice

1 teaspoon vanilla extract

1/4 teaspoon ground cinnamon

1/4 cup water

1/4 teaspoon sea salt

Prepare the Figs: Wash the figs thoroughly under cold water. Remove the stems and chop them into small pieces. Set aside in a medium bowl.

    Combine Ingredients: In a heavy-bottomed saucepan, combine the chopped figs, granulated sugar, lemon juice, vanilla extract, ground cinnamon, water, and sea salt.

      Cook the Mixture: Over medium heat, stir the mixture until the sugar has dissolved and it begins to bubble. Reduce the heat to low and allow it to simmer. Stir occasionally to prevent sticking.

        Mash and Thicken: After about 15-20 minutes of simmering, use a potato masher or fork to mash the figs gently. Continue to simmer for another 20-30 minutes, or until the mixture has thickened to your desired consistency. Keep an eye on it and stir frequently.

          Check Consistency: To test the jam's consistency, place a spoonful on a cold plate and let it sit for a minute. Run your finger through the jam; if it holds its shape and doesn't run back together, it’s ready!

            Jar the Jam: Carefully pour the hot fig jam into sterilized jars, leaving about 1/4 inch of headspace. Wipe the rims clean and seal with lids.

              Cool and Store: Let the jars cool at room temperature. Once cooled, store the fig jam in the refrigerator for up to a month, or process in a water bath canner for longer shelf life.
