1/2 teaspoon baking soda

1/2 teaspoon salt

3/4 cup unsalted butter, softened

1 cup brown sugar, packed

1/4 cup unsulfured molasses

1 large egg

1 teaspoon vanilla extract

1/4 cup granulated sugar (for rolling cookies)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, ground ginger, ground cinnamon, ground cloves, baking soda, and salt. Set this aside.

      Cream Butter and Sugar: In a large bowl, using an electric mixer, cream the softened butter and brown sugar together on medium speed until light and fluffy, about 3-5 minutes.

        Add Molasses and Egg: Add the molasses, egg, and vanilla extract to the creamed mixture. Beat on low speed until well combined.

          Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix; a bit of flour showing is okay.

            Form the Cookies: Using a cookie scoop or tablespoon, take portions of dough and roll them into balls (about 1 inch in diameter). Roll each ball into the granulated sugar to coat.
