2 cups all-purpose flour

1 cup granulated sugar

½ cup brown sugar, packed

½ cup unsalted butter, softened

1 cup buttermilk

3 large eggs

2 teaspoons baking powder

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon vanilla extract

2 cups peeled, cored, and chopped apples (Granny Smith or Honeycrisp work great)

For the Crumb Topping:

¾ cup all-purpose flour

¾ cup rolled oats

½ cup brown sugar, packed

½ teaspoon ground cinnamon

½ cup unsalted butter, melted

For the Glaze (optional):

1 cup powdered sugar

2-3 tablespoons milk

½ teaspoon vanilla extract

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.

    Prepare the Cake Batter:

      - In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This should take about 3-4 minutes.

        - Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

          - In a separate bowl, combine the flour, baking powder, baking soda, ground cinnamon, and salt. Gradually add this dry mixture to the creamed mixture, alternating with buttermilk. Start and finish with the dry ingredients, mixing until just combined.

            - Gently fold in the chopped apples until evenly distributed.

              Prepare the Crumb Topping:

                - In a medium bowl, mix together the flour, rolled oats, brown sugar, cinnamon, and melted butter. Use a fork or your fingers to crumble the mixture until it resembles coarse crumbs.

                  Assemble the Cake:
