1 can (16 oz) refrigerated biscuits (preferably buttermilk)

1 cup marinara sauce (or pizza sauce)

1 cup shredded mozzarella cheese

1 small bell pepper, diced (any color)

1/2 cup cherry tomatoes, halved

1/2 cup mushrooms, sliced

1/4 cup red onion, finely chopped

1/2 cup spinach (fresh or slightly wilted)

1 teaspoon dried oregano

1 teaspoon garlic powder

Olive oil (for greasing the skillet)

Salt and pepper to taste

Fresh basil leaves (for garnish, optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Skillet: Grease a large cast-iron skillet or an oven-safe non-stick skillet with olive oil to prevent sticking.

      Roll Out the Biscuits: Take each biscuit and flatten it with your fingers or a rolling pin to about 1/4-inch thick disks. Arrange these disks in a single layer at the bottom of the prepared skillet, slightly overlapping if necessary.

        Layer the Sauce: Spread an even layer of marinara sauce over the biscuit base, making sure to cover it well.

          Add Veggies: Evenly distribute the diced bell pepper, cherry tomatoes, mushrooms, red onion, and spinach over the sauce. Sprinkle with dried oregano, garlic powder, salt, and pepper to taste.

            Top with Cheese: Generously sprinkle shredded mozzarella cheese over the veggie toppings, ensuring that all ingredients are well-covered.

              Bake: Place the skillet in the preheated oven and bake for about 20-25 minutes, or until the biscuits have risen and turned golden brown, and the cheese is bubbling and slightly browned.
