Mini Veggie Pizza Tortilla Cups

4 small flour tortillas

1 cup shredded mozzarella cheese

1/2 cup cherry tomatoes, halved

1/2 cup bell peppers, diced (any color)

1/2 cup red onion, finely chopped

1/2 cup cooked spinach, drained and chopped

1/4 cup black olives, sliced

1/2 teaspoon dried oregano

1/2 teaspoon garlic powder

Salt and pepper, to taste

Olive oil spray or a little olive oil for greasing

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Tortilla Cups: Using a round cookie cutter or a glass, cut each tortilla into smaller circles (about 4 inches in diameter). Each tortilla should yield about 3-4 circles.

      Shape Tortillas: Lightly grease a muffin tin with olive oil spray or a brush of olive oil. Press each tortilla circle into a muffin cup, gently shaping it to form a cup.

        Add the Cheese: Sprinkle a small amount of mozzarella cheese at the bottom of each tortilla cup.

          Fill with Veggies: Evenly distribute the halved cherry tomatoes, diced bell peppers, chopped red onion, cooked spinach, and sliced olives into each cup.

            Season: Sprinkle dried oregano, garlic powder, salt, and pepper over the veggie filling and top with the remaining mozzarella cheese.

              Bake: Place the muffin tin in the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly and the tortilla cups are lightly golden.

                Cool and Serve: Once baked, remove the muffin tin from the oven and let the cups cool for a few minutes. Carefully remove each tortilla cup using a butter knife or spoon.

                  Garnish (optional): For an extra touch, you can garnish with fresh basil or a sprinkle of crushed red pepper flakes before serving.
