Ingredients

8 medium ripe tomatoes

1 can (12 oz) of tuna in water, drained

1/4 cup mayonnaise (or Greek yogurt for a lighter option)

1/4 cup diced celery

1/4 cup diced red onion

1/4 cup diced cucumber

2 tablespoons sweet pickle relish (optional)

1 tablespoon Dijon mustard

Juice of 1/2 lemon

Salt and pepper to taste

Fresh dill or parsley for garnish

Instructions

Prep the Tomatoes: Rinse the tomatoes under cold water. Carefully slice the tops off each tomato and scoop out the insides with a small spoon or melon baller, making sure to leave enough flesh for structure. Set the tomato shells upside down on a paper towel to drain excess moisture.

Mix the Tuna Salad: In a mixing bowl, combine the drained tuna, mayonnaise (or Greek yogurt), diced celery, diced red onion, diced cucumber, pickle relish (if using), Dijon mustard, and lemon juice. Stir well to integrate all ingredients until smooth and creamy.

Season: Taste the tuna mixture and add salt, pepper, and additional lemon juice if needed. Ensure the flavors are balanced and to your liking.

Stuff the Tomatoes: Gently spoon the tuna salad mixture into each tomato shell, packing it lightly. Fill each tomato generously until overflowing slightly.

Garnish and Chill: Place the stuffed tomatoes on a serving platter. Garnish with fresh dill or parsley for a pop of color and added flavor. Refrigerate for at least 30 minutes to allow the flavors to meld and to serve them chilled.

Serve and Enjoy: Serve the Mini Tuna Salad Stuffed Tomatoes as an appetizer or light lunch. They can be enjoyed on their own or paired with a side salad and your favorite crunchy bread.
