1 medium zucchini, grated

1/2 cup all-purpose flour

1/4 cup cornmeal

1/4 cup grated Parmesan cheese

2 large eggs

1 clove garlic, minced

1 teaspoon baking powder

Salt and pepper, to taste

1/4 teaspoon smoked paprika (optional)

Prepare the Zucchini: Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out excess moisture. This is crucial to avoid soggy fritters.

    Mix Dry Ingredients: In a large mixing bowl, combine the flour, cornmeal, Parmesan cheese, baking powder, smoked paprika, salt, and pepper. Stir well to combine.
