Ingredients
  

1 cup fresh spinach, chopped

1 cup mushrooms, diced (button or cremini work well)

1/2 cup cream cheese, softened

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 tablespoon olive oil

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 package of phyllo pastry cups (about 15-20 cups)

Fresh parsley or basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.

    Sauté the Vegetables: In a skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant. Add the diced mushrooms and cook for 3-4 minutes, until they soften and release their moisture. Stir in the chopped spinach and cook until wilted, around 2-3 minutes. Season with salt, pepper, and red pepper flakes if using. Remove from heat.

      Mix the Cheese Filling: In a mixing bowl, combine the cream cheese, mozzarella, and Parmesan. Once the sautéed veggies have cooled slightly, add them to the cheese mixture and stir until all ingredients are well combined.
